According to Redemptionis Sacramentum, issued by the Congregation for Divine Worship and the Discipline of the Sacraments [138.] "...the Most Holy Sacrament, when exposed, must never be left unattended even for the briefest space of time."
When the Eucharist is exposed in the monstrance, it is vulnerable and out of respect as well as safety for the sacrament, it should never be left unattended. As a result, we try to schedule at least 2 people/families per hour, to make sure someone is there at all times.
